Kielbasa with Roasted Potatoes

As promised in yesterday's post, here's a recipe for a quick and simple supper. Add bread and a salad and you're ready to dine.

Ingredients:
5 medium red potatoes thinly sliced
1 Tbsp. oil
1/2 tsp. salt
1/4 tsp. pepper
1 lb. turkey Kielbasa sausage

Heat broiler and line a large baking sheet with foil. Toss potatoes with oil, pepper, & salt. Spread on baking sheet. Cut sausage into quarters and slash each quarter in several places.. Broil potatoes for 10 minutes or until lightly browned and softened. Place sausage on top of potatoes and broil for an additional 4-5 minutes.

I was just in the store this morning looking at the turkey kielbasa. Is it as good as beef kielbasa?

It sure was a lot lower in calories and fat!

I have only had turkey kielbasa so I can't really help you out here, but everyone in my family loves it so I say give it a try. Definitely worth the savings in calories and fat IMO. : )

I've done something similar. I also add onion, zucchini, yellow squash and diced tomatoes. I saute the kielbasa (turkey also), then add the onion and add everything else in...so yummy
